Xoandre's Fried Chicken (XFC)
Looking for the perfect imitation of Kentucky Fried Chicken, but without the need for all those herbs & spices? Check this out...
Ingredients:
- 1 lb Skinless Boneless Chicken breast halves (or any style chicken you like)
- 3 Large Eggs
- 3 tbsp Hidden Valley Ranch dressing
- 1 tbsp McCormick Rotisserie Chicken Seasoning
- 1/3rd cup unflavored Instant Potato flakes (dry)
- 2 tbsp Grated Parmesan Cheese
- Dash Onion Powder
- Dash Paprika
- 1 tsp Granulated Garlic
- 1 tbsp parsley (optional)
- 1/3rd cup Little Crow Foods brand Fryin' Magic or Bakin' Miracle
- 3 tbsp Peanut Oil or Canola Oil

Preparation:
- Preheat oven to 450 degrees Farenheit.
- Clean chicken & set aside.
- In a measuring cup, mix together the Instant Potato Flakes, Fryin' Magic (or Bakin' Miracle), McCormick Rotisserie Seasoning, grated Parmesan Cheese & other spices.
- Prepare a baking pan or cookie sheet with sides by coating with Peanut (or Canola) oil, making sure there is about 1/16th an inch layer of oil spread across the entire surface of the pan.
- In a shallow dish, lightly beat eggs.
- Add ranch dressing & stir thoroughly.
- Place chicken into egg mixture & coat generously with egg.
- Pour half of breading mixture into a 1-gallon zip-lock bag.
- one at a time, add egg-coated Chicken pieces to the bag containing the breading & shake well, massaging breading into chicken pieces while in the bag.
- Add more breading as needed, coating all chicken pieces thoroughly with the breading.
- Place breaded chicken into pan with oil.
- Sprinkle extra breading over the top of all chicken pieces & pat smooth.
- Bake at 450 degrees Farenheit for 10 minutes per side, using a flat spatula to flip the chicken (tongs will tear the breading loose from the chicken).
- Check the core temperature of the chicken, making sure it is at least 150 degrees in the center.
- When the chicken is golden brown & the perfect internal temperature, serve with your favorite side dish & enjoy!

Tip:
For spicier chicken, add 1 tsp Chili Powder or Cayanne pepper to the egg mixture before cooking.
