When I was a child, my mother worked all day & attended college in the evenings. All day, my brothers, sister, & I were on our own in the house (back in the day when latch-key kids were not considered a form of child-endangerment). Anyway, my big brother was never the kind of guy who had patience or the skill to do more than microwave a frozen meal, & my sister was always off in her own little world doing whatever it is that girls do at that age. In the mean time, I had spent quite a bit of time with Granny learning how to cook for myself & my siblings, & even on occasion my mom.

From that first time Granny showed me the magic of using water & a lid to steam a sunny-side-up egg, I was hooked on cooking. Over the years, my techniques & food varieties have grown & expanded to include pretty much anything except fish or seafood. Why not fish or seafood? Well... it's a combination of the odors of raw or cooked fish as well as the lack of experience either eating or having seafood as any part of my upbringing. It was not & thus is not something I find appealing. The same can be said of any meat that is cooked medium to rare. I prefer well-done or at least medium-well.

That being said, I have a broad list of recipes which involve chicken, pork, & beef. My selections range from Thai to Italian, from Mexican to all-American cuisine. So here are a few of my personal favorites...
