Orange Teriyaki Chicken Tacos
Tangy & sweet, these tacos will satisfy your craving for something wholesome & delicious.
Ingredients:
- 1 lb Skinless Boneless Chicken breast halves (2 to 3 uncooked, thawed breast halves)
- 1 Seedless Orange, peeled. Remove all skin layers & core fragments
- 2 tbsp Teriyaki sauce
- 1 tbsp Worcestershire sauce
- 2 tbsp Sugar or Honey
- 1/8 cup Hungry Jack Buttermilk pancake mix (do not use Hungry Jack Complete Mix)
- 5 Soft tortillas
- 1 tsp Peanut or Canola oil

Preparation:
- Cut chicken breasts into small pieces about an inch or two in size. Place in a 2-quart bowl.
- Separate the Orange slices & puree. Add to chicken.
- Mix together with spoon until well blended.
- Stir in Teriyaki & Worcestershire sauces as well as Sugar (or honey). Stir until mixture is one uniform color.
- Marinade in the refrigerator for 30 - 45 minutes.
- Oil a skillet or frying pan with Peanut (or Canola) oil.
- Pour mixture into pan (include all the marinade juices) & cook covered for five minutes over medium-high heat, stirring occasionally.
- Remove lid & sprinkle in Pancake mix, stirring constantly.
- Reduce heat & simmer for 3 minutes or until thickened, stirring often.
- When mixture has thickened, serve on warm soft tortillas.

Top your tacos with diced tomato or green onion.
